Chill all drinks, including the rum before you start.

Make a double quantity of ice cubes in case you have to refill the punch bowl.

Ice cubes can be made up to one week ahead. Once frozen, wrap ice cube trays in plastic wrap and return to freezer.

Add fresh raspberrie­s to ice cubes for extra flavour and vibrant colour. For a non-alcoholic punch,

omit the rum.
