SMOKED SALMON QUICHE

PREP AND COOK: 40 MINS

• Cooking oil spray

• 3 sheets frozen shortcrust pastry, thawed

• 300ml tub sour cream

• 200g packet smoked salmon, chopped

• 2 cage-free eggs, lightly beaten

• ¼ cup finely chopped fresh chives

• Chopped chives, to garnish

1 Spray three x 12-hole round-based patty pans (1½-tblsps capacity) with oil.

2 Using a 6½cm round fluted cutter, cut out 36 rounds from pastry. Line prepared pan holes with rounds.

3 Using a wooden spoon, beat sour cream in a medium bowl until smooth. Stir in smoked salmon, eggs and chives. Season with salt and pepper. Spoon evenly into patty pans.

4 Cook in a hot oven (200°C) for about 20 minutes, or until pastry is cooked and filling is set. Stand in trays for 5 minutes.

5 Serve warm or cold, garnished with extra chives.
