CHICKEN PASTA SALAD SERVES 4 TIME 20 MINS

• 200g spiral pasta

• 250g cherry tomatoes,

halved

• 3 stalks celery, diced

• 3 spring/green onions,

finely sliced

• 2 tblsps chopped fresh

parsley

• ½ cup grated Tasty cheese • ½ barbecued chicken, meat

removed and shredded • Juice of 1 lemon

• ¼ cup olive oil 1 Cook the pasta as per the packet directions. Drain and refresh under cold water until cool. Drain pasta well then place into a large bowl.

2 Add the cherry tomatoes, celery, onions, parsley, cheese, chicken, lemon juice and olive oil. Season with pepper and toss to combine. Serve with lemon wedges and garnish with basil leaves, if desired.
