CHEWY MUESLI BARS
PREP AND COOK: 40 MINS
• 50g unsalted butter, chopped • ¼ cup raw caster sugar
• ¼ cup honey
• ½ cup Rice Bubbles
• ½ cup traditional rolled oats • ½ cup desiccated coconut • ½ cup self-raising flour
• ½ cup diced dried apricots • ½ cup sultanas
• ⅓ cup sweetened dried
1 Grease a 20cm square cake pan. Line base and sides with baking paper, extending paper 2cm above pan edges. 2 Place butter, sugar and honey in a small saucepan. Stir over a low heat until butter is melted. Remove from heat and stand for 5 minutes to cool slightly.
3 Combine remaining ingredients in a large bowl. Add butter mixture. Stir to combine. Press mixture into prepared pan. Smooth top.
4 Cook in a moderate oven (180°C) for about 25 minutes, or until golden. Remove and cool completely in pan.
5 To serve, lift slice out of pan. Remove baking paper. Cut into bars.
