CHEWY MUESLI BARS

PREP AND COOK: 40 MINS

• 50g un­salted but­ter, chopped • ¼ cup raw caster sugar

• ¼ cup honey

• ½ cup Rice Bub­bles

• ½ cup tra­di­tional rolled oats • ½ cup des­ic­cated co­conut • ½ cup self-rais­ing flour

• ½ cup diced dried apri­cots • ½ cup sul­tanas

• ⅓ cup sweet­ened dried

cran­ber­ries

1 Grease a 20cm square cake pan. Line base and sides with bak­ing paper, ex­tend­ing paper 2cm above pan edges. 2 Place but­ter, sugar and honey in a small saucepan. Stir over a low heat un­til but­ter is melted. Re­move from heat and stand for 5 min­utes to cool slightly.

3 Com­bine re­main­ing in­gre­di­ents in a large bowl. Add but­ter mix­ture. Stir to com­bine. Press mix­ture into pre­pared pan. Smooth top.

4 Cook in a mod­er­ate oven (180°C) for about 25 min­utes, or un­til golden. Re­move and cool com­pletely in pan.

5 To serve, lift slice out of pan. Re­move bak­ing paper. Cut into bars.
