MAPLE CHICKEN WINGS WITH MANGO SALAD

SERVES 4 PREP AND COOK: 50 MINS

• ¾ cup almond meal

• 12 chicken wings

• 1 cup pure maple syrup • ¼ cup flaked almonds • Mango Salad, (see below)

to serve

1 Preheat oven to 160°C. Spray a large ovenproof dish with cooking oil spray.

2 Place almond meal into a shallow bowl. One at a time, coat chicken wings in almond meal and press on firmly. Arrange wings in a single layer in baking dish and pour over the maple syrup.

3 Bake in the oven for 35 to 40 minutes, basting with maple syrup, twice during cooking, or until wings are cooked and the maple syrup is sticky and beginning to caramelise.

4 Meanwhile, preheat a grill to high. Remove wings from oven and sprinkle over the flaked almonds. Place wings under the grill until the almonds are golden.

5 Serve wings with Mango Salad and drizzle with bottled salad dressing.

MANGO SALAD

Combine shredded cabbage, fresh mint leaves, thinly sliced red onion and sliced mango in a bowl.
