MAPLE CHICKEN WINGS WITH MANGO SALAD

SERVES 4 PREP AND COOK: 50 MINS

• ¾ cup al­mond meal

• 12 chicken wings

• 1 cup pure maple syrup • ¼ cup flaked al­monds • Mango Salad, (see be­low)

to serve

1 Pre­heat oven to 160°C. Spray a large oven­proof dish with cook­ing oil spray.

2 Place al­mond meal into a shal­low bowl. One at a time, coat chicken wings in al­mond meal and press on firmly. Ar­range wings in a sin­gle layer in bak­ing dish and pour over the maple syrup.

3 Bake in the oven for 35 to 40 min­utes, bast­ing with maple syrup, twice dur­ing cook­ing, or un­til wings are cooked and the maple syrup is sticky and be­gin­ning to caramelise.

4 Mean­while, pre­heat a grill to high. Re­move wings from oven and sprin­kle over the flaked al­monds. Place wings un­der the grill un­til the al­monds are golden.

5 Serve wings with Mango Salad and driz­zle with bot­tled salad dress­ing.

MANGO SALAD

Com­bine shred­ded cab­bage, fresh mint leaves, thinly sliced red onion and sliced mango in a bowl.
