PASSIONFRUIT COLADA
SERVES 2 PREP 10 MINS
• 1 cup unsweetened
pineapple juice, chilled • ⅓ cup coconut cream • ¼ cup vodka
• ¼ cup passionfruit pulp • 1 tsp caster sugar
• 2 cups ice cubes • Passionfruit halves,
to garnish (optional)
1 Pour pineapple juice, coconut cream, vodka, passionfruit pulp and sugar into large jug. Stir to combine.
2 Just before serving, divide ice between two tall glass tumblers. Divide vodka mixture over ice.
3 Garnish with passionfruit halves (optional).
