True blue food! – Vegemite meat pies

VEGEMITE MEAT PIES MAKES 8

PREP AND COOK: 1 HOUR

• 1 onion, finely diced

• 500g beef mince

• 1 tblsp cornflour dissolved

in 1 tblsp water

• 2 tsps Vegemite

• 1 tblsp barbecue sauce

• ¾ cup beef stock

• 8 sheets frozen shortcrust pastry,

thawed

• 2 sheets frozen puff pastry,

thawed

• 1 egg, beaten

• 1 tblsp sesame seeds

1 Heat a lightly oiled, large frying pan, over a high heat. Add onion. Cook until soft. Add beef, cook, stirring with a wooden spoon, breaking up mince for about 5 minutes until browned. 2 Add cornflour mixture, Vegemite, sauce and stock.

Stir to combine. Reduce heat to medium to low. Simmer for about 10 minutes, or until sauce is thickened. Set aside and allow to cool.

3 Preheat a 2-pie capacity electric pie maker. Cut 8 shortcrust pastry rounds for the bases and 8 puff pastry rounds for the tops. Line bases with shortcrust pastry, fill with ¼ cup meat mixture and top with puff pastry rounds. Brush the tops with egg and sprinkle with sesame seeds.

4 Cook for about 7 minutes, or until pastry is golden. Serve with mustard and tomato sauce.
