BACON, BEAN AND TOMATO SOUP

PREP AND COOK: 30 MINS 1 Heat oil in a stockpot over a medium heat.
Add bacon, onion and carrot. Cook, stirring, for about 5 minutes, or until onion is soft. Stir in garlic and oregano.
Add stock and tomatoes. Bring to a boil. Cover with a lid. Simmer for 10 minutes. Stir in beans and cabbage. Simmer for a further 5 minutes, or until cabbage is tender. Season with salt and pepper.
Just before serving, stir in the parsley. Serve soup with crusty rolls.
