Ideally, mandarins can be stored in the fridge for up to two weeks, or in a cool, dark place for up to three days. Make sure they are kept out of direct sunlight.
Imperial mandarins are the most popular variety in Australia, originating in Sydney in 1890. They are available from April to October.
Make a sauce to serve over pancakes or crepes by stirring equal quantities of caster sugar and water in a saucepan over a low heat, until the sugar is dissolved.
Bring to a boil. Boil, without stirring, until the bubbles subside and the mixture turns golden brown. Remove from the heat.
Carefully add a little fresh-squeezed mandarin juice and segmented mandarins.
Stir over a low heat until toffee is melted. Remove from heat, cool slightly.
Serve warm.
