SOFT CHICKEN TACOS WITH SALSA
SERVES 4
PREP AND COOK: 20 MINS 600g chicken stir-fry strips
40g sachet fajita spice mix 3 large tomatoes, chopped 1 large avocado, chopped ⅓ cup chopped fresh
coriander
250g packet mini tortillas
1 Toss chicken in spice mix in a large bowl.
2 Heat an oiled, large non-stick frying pan over a high heat. Add chicken in two batches. Cook, stirring occasionally, for about 5 minutes, or until cooked. Remove from the heat.
3 To make salsa, combine tomatoes, avocado and coriander in a bowl.
4 Heat tortillas according to packet directions.
5 Serve tortillas filled with chicken and salsa.
