CHICKEN SCHNITZEL BURGERS WITH BACONNAISE

SERVES 4

PREP AND COOK: 25 MINS 1 small Lebanese cucumber ¼ cup olive oil

4 pieces crumbed chicken

schnitzel (480g)

8 baby cos lettuce leaves

4 soft rolls, halved, toasted BACONNAISE

150g shortcut bacon rashers,

trimmed, finely chopped ½ cup whole egg mayonnaise 1 tblsp sweet chilli sauce

1 Using a vegetable peeler, peel cucumber lengthways into long, thin ribbons.

2 To make baconnaise, heat an oiled, large, deep, non-stick frying pan over a medium to high heat. Add bacon. Cook, stirring, for about 3 minutes, or until crisp. Remove. Transfer to a bowl. Stir in mayonnaise and sauce. Set aside.

3 Heat oil in same pan over a medium heat. Add chicken. Cook for about 4 minutes on each side, or until golden brown and cooked. Drain on absorbent kitchen paper.

4 Divide lettuce and chicken among rolls. Spread with baconnaise. Top with cucumber. Replace lids. Serve.
