HONEY SOY CHICKEN LETTUCE CUPS

PREP AND COOK: 15 MINS

12 honey soy marinated chicken skewers

⅓ cup chopped roasted salted peanuts ⅓ cup finely chopped fresh coriander 2 tblsps lemon juice

8 butter lettuce leaves

1 cup shredded carrot

3 green spring onions, thinly sliced Sweet chilli sauce, to serve

1 Heat an oiled, large grill plate over a medium to high heat. Add chicken. Cook, turning occasional­ly, for about 10 minutes, or until cooked through.

2 Remove chicken from skewers. Place in a large bowl. Stir in peanuts, coriander and lemon juice. Season with salt and pepper. Mix well.

3 Serve chicken in lettuce leaves. Top with carrot and onions. Drizzle with sweet chilli sauce.
