SATAY CHICKEN WITH PEANUT SAUCE

500g chicken breast fillets
1 tsp ground turmeric
1 tblsp ginger paste
2 tsps garlic paste
1 tsp fish sauce
2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
¼ cup chopped fresh mint
PEANUT SAUCE
½ cup crunchy peanut butter
165ml can coconut milk
1 tblsp fish sauce
1 tblsp soy sauce
2 tblsps lime juice
1 Trim and cut chicken into 3cm pieces. Combine with turmeric, ginger, garlic and fish sauce in a large bowl. Toss to coat.
2 Heat an oiled, large frying pan over medium to high heat. Add chicken in two batches. Cook, stirring occasionally, for about 5 minutes, or until chicken is cooked through.
3 Meanwhile, make sauce. Combine peanut butter, milk and sauces in a small saucepan. Stir over a medium to low heat for about 4 minutes, or until sauce just comes to the boil. Remove.
Stir in lime juice.
4 Combine cucumber slices and mint in a bowl. 5 Serve chicken with peanut sauce and cucumbers. Garnish with mint leaves and lime wedges, if desired.
