CHORIZO AND POTATO CHICKEN PARMIGIANA

350g box frozen Pommes

Crunchy Potato Puffs

4 x 200g crumbed chicken

schnitzels

1 chorizo (125g), finely chopped

1 cup tomato pasta sauce ⅓ cup roasted red capsicum

strips, drained

1 cup grated pizza cheese 150g mixed salad leaves Bottled balsamic salad

dressing, to serve

1 Place potato puffs on an oven tray. Arrange schnitzels on a lightly oiled, large oven tray.

2 Cook both trays in a very hot oven (220°C), turning chicken and shaking potato puffs halfway, for 10 minutes, or until lightly golden and crisp. Remove both trays.

3 Meanwhile, heat a medium, non-stick frying pan over a medium to high heat. Add chorizo. Cook, stirring, for about 3 minutes, or until golden brown. Drain on absorbent kitchen paper. 4 Spread 1 tblsp of the pasta sauce over the top of each schnitzel. Top with potato puffs, chorizo and capsicum strips. Dollop remaining sauce over schnitzels. Sprinkle with cheese. Return to oven.

5 Cook in a very hot oven for a further 5 minutes, or until chicken is cooked and cheese is melted and golden.

6 Serve with salad leaves with dressing.
