SMOKY SAUSAGE CASSEROLE
SERVES 4
PREP AND COOK: 1 HOUR, 15 MINS
1 tblsp olive oil
1 onion, finely chopped 1 clove garlic, crushed
1 stalk celery, finely chopped 1 red and green capsicum,
cut into 3cm pieces
6 pork sausages
1 tsp sweet smoked paprika ½ tsp ground cumin
2 x 400g cans chopped
tomatoes
400g can cannellini beans,
rinsed, drained
250g baby spinach leaves 2 tblsps fresh breadcrumbs
1 Heat oil in a deep, flameproof casserole dish over a medium heat. Add onion. Cook, stirring occasionally, for about 5 minutes, or until soft. Add garlic, celery and capsicums. Cook, stirring occasionally, for 5 minutes. 2 Increase to a high heat. Add the sausages. Cook, turning for about 4 minutes, or until browned all over.
3 Reduce the heat to medium. Add the spices. Season with salt and pepper. Cook, stirring, until fragrant. Stir in tomatoes. Bring to a simmer. Cover. Simmer for a further 40 minutes, stirring occasionally, until sausages are cooked.
4 Uncover casserole. Stir in the beans and the spinach. Cook a further 5 minutes, or until hot.
5 Scatter over the breadcrumbs. Cook under a preheated grill for 2 to 3 minutes, or until top is golden and crisp.
