One car­rier with di­rect flights to Hong Kong from Aus­tralia is Vir­gin At­lantic (vir­ginat­lantic.com), which has crew trained to cater for chil­dren on board and with tod­dler seats avail­able. The seats cur­rently can’t be pre-booked so be pre­pared to ex­plain your re­quire­ments on check-in.
