This wine mir­rors that gear change with a com­mon va­ri­ety as more ar­ti­san pro­duc­ers look to add in­ter­est and depth to sauvi­gnon blanc. Matt Wenk has crafted Kuitpo-sourced fruit with wild yeast in­flu­ences to show more creamed-bun flavours and a dash of ex­otic spice, the wine stirred in bar­rel for many months to give it tex­ture and length.
