Aus­tralia’s best ri­cotta comes from a fam­ily cheese­mak­ing busi­ness tucked away in the back streets of sub­ur­ban Newton. La Vera Fine Cheese Producers, run by the Marmorale fam­ily, won the na­tional gong for its ri­cotta at the pres­ti­gious 2014 Aus­tralian Grand Dairy Awards. The del­i­cately tex­tured ri­cotta is just one of a sta­ble of cheeses hand­crafted at La Vera, which was es­tab­lished by Pino and his wife Gio­vanna in 1984. Th­ese days, daugh­ters Lucy and Sab­rina are also in­volved in the suc­cess­ful fam­ily busi­ness. Lucy Marmorale-Men­chise, left with Pino, says La Vera uses cows’ milk from Dakara Farms at Mur­ray Bridge and uses tra­di­tional recipes and tech­niques to make cheese. “We have a firm be­lief that masspro­duced cheeses lack the charm, del­i­cacy and ap­peal of a hand­made spe­cialty cheese,” Lucy says.
