Australia’s best ricotta comes from a family cheesemaking business tucked away in the back streets of suburban Newton. La Vera Fine Cheese Producers, run by the Marmorale family, won the national gong for its ricotta at the prestigious 2014 Australian Grand Dairy Awards. The delicately textured ricotta is just one of a stable of cheeses handcrafted at La Vera, which was established by Pino and his wife Giovanna in 1984. These days, daughters Lucy and Sabrina are also involved in the successful family business. Lucy Marmorale-Menchise, left with Pino, says La Vera uses cows’ milk from Dakara Farms at Murray Bridge and uses traditional recipes and techniques to make cheese. “We have a firm belief that massproduced cheeses lack the charm, delicacy and appeal of a handmade specialty cheese,” Lucy says. Try the cheeses at La Vera’s “Bottega” next door to the factory at 16-18 Hamilton Tce, Newton. KYLIE FLEMING
