Fer­mented with wild yeasts, this is sub­tle and un­der­stated, although more aro­matic than the stan­dard bot­tling, with spicy chamomile and typ­i­cal lime with some earthy lees com­plex­ity. Dry and strong on the palate, it has tex­tu­ral rich­ness and an at­trac­tive phe­no­lic grip that pro­vide a long and slightly closed fin­ish. It needs 10 years to show its best.
