CHOCOLATE CHIP COOKIES

250g butter, softened
1 teaspoon vanilla extract
¾ cup (165g) caster sugar
¾ cup (165g) firmly packed light
brown sugar
1 egg
2¼ cups (335g) plain flour 1 teaspoon bicarbonate of soda 375g dark chocolate melts,
chopped coarsely
1 Preheat oven to 180°C/160°C fan. Grease three large oven trays and line with baking paper.
2 Beat butter, extract, sugars and egg in a large bowl with an electric mixer until light and fluffy. Stir in sifted flour and soda, in two batches. Stir in chocolate.
3 Roll tablespoons of mixture into balls; place about 5cm apart on trays. 4 Bake cookies for 15 minutes or until golden brown; cool on trays.
