APPLE PIE ICE-CREAM

PREP TIME 15 MINUTES (+ FREEZING) SERVES 6

Slightly soften 2 litres (8 cups) vanilla ice-cream by standing at room temperatur­e for 10 minutes (don’t microwave). Stir in 1 cup canned pie apple, 1 teaspoon ground cinnamon and 100g broken Anzac biscuits until just combined. Spoon mixture into a freezerpro­of container. Cover; freeze until firm. Serve with extra Anzac biscuits.
