PANCAKES

PREP + COOK TIME 30 MINUTES SERVES 4

Make pancakes (recipe on page 31). Peel 2 medium green-skinned apples, then core and cut each into 8 wedges. Melt 20g butter in a large frying pan over high heat. Add apple and 1 tablespoon brown sugar; cook, stirring occasional­ly, for

3 minutes. Reduce heat to medium; cook for 2 minutes or until golden.

Spoon apple over pancakes. Serve with ½ cup double cream.
