LEMON & SUGAR PANCAKES

Make pancakes (recipe on page 31). Mix 2 tablespoons caster sugar with 1 teaspoon finely grated lemon zest in a small bowl. Sprinkle lemon sugar over pancakes, then drizzle with ⅓ cup lemon juice. Serve with lemon wedges.
