PIRATES’ TREASURE
PREP TIME 1 HOUR SERVES 12
EQUIPMENT
40cm square cake board
CAKE
12 double chocolate chip muffins 453g tub vanilla frosting
(see cook’s notes) green food colouring
DECORATIONS
1½ cups small mixed lollies
1 x 50g chocolate-coated honeycomb
bar, or plain honeycomb assorted pirate toys red decorating icing
1 Using a small, sharp knife, cut the peak off the top of each muffin; reserve. Using a spoon, remove about 1 tablespoon of cake out of centre of each muffin; discard.
2 Divide mixed lollies evenly into centre of each muffin, filling almost to the top. Top with reserved muffin tops, trimming so they fit snugly in hole on top of lollies.
3 Tint frosting green; spread over tops of muffins. 4 Discard chocolate from honeycomb; break honeycomb into pieces. Using picture as a guide, decorate cakes with honeycomb and assorted pirate toys. On one cake draw an “X” with decorating icing using a flat piping nozzle (these come with the icing tube). Position cakes on cake board; secure with a little frosting.
