To sweeten these treats, we’ve used nat­u­ral sweet­en­ers, such as fresh fruit like dates and straw­ber­ries, raw honey, pure maple syrup and rice malt syrup. Pure flo­ral honey, un­like blended honey, has a low GI. Pure maple syrup, the con­cen­trated sap of the maple tree, also has a low GI, so is a good choice to avoid high blood glu­cose spikes. Rice malt syrup is made by cook­ing brown rice flour with en­zymes to break down the starch into su­gar. It’s fruc­tose-free and a pop­u­lar ve­gan al­ter­na­tive to honey.
