Make a batch of kitchari and store it in an air­tight con­tainer in the fridge for up to 3 days for quick meals. Re­heat on the stove or in the mi­crowave.

Ghee is clar­i­fied but­ter. It’s avail­able in tubs along­side but­ter in the re­frig­er­a­tor sec­tion, or in jars in the In­dian sec­tion, of su­per­mar­kets.
