PRAWN AND PROSCIUTTO SALAD

Serves 4 Prep 15 minutes Quarter 2 baby cos lettuces and arrange wedges on a large serving platter. Top with 100g torn thinly sliced prosciutto (you could also grill until crisp), 500g ALDI Ocean Royale Extra Large Cooked Tiger Prawns* (peeled, deveined, tails on), 150g packet bagel crisps, ⅓ cup shaved parmesan cheese and 4 shelled, halved soft-boiled eggs. Season. Drizzle with ½ cup prepared cocktail sauce to serve and accompany with lemon wedges. Boil eggs ahead of time and, once cooled, keep in the refrigerat­or for up to 2 days.

TIP: For a prawn cocktail style salad, swap prosciutto and eggs for some sliced avocado and mango.
