“I’ve never lost my joy in Christmas. It’s having those you love around you and, for me, it’s also a celebratio­n of food that’s very special but easy to prepare. Of all the times of year, Christmas is one to be super-organised, to ensure there’s no stress on the day. Presuming you’ve been able to buy the lobster already prepared (if you’re being as extravagan­t as I am), made the cherry jam and the Christmas pudding ages in advance, and done the preparatio­n the night before for the pork and the brandy custard (it’s great served cold), then the balance of the meal is simple and can be done at the last moment when your family can help. It’s all about sharing the table with family and friends, with joy.”
