Finger limes are an Australian native bursting with sharp, acidic pearls, giving them the nickname “citrus caviar”. Increasing­ly used as a garnish in top restaurant­s, they have been a food source for Indigenous people for thousands of generation­s. The fruit resemble small fat fingers and come in a range of colours. To use, cut in half, squeeze out pearls and scatter on seafood.
