Frozen cereal and yoghurt discs

SERVES 4 (MAKES 12) PREP 15 MINUTES PLUS FREEZING TIME 2 HOURS DIFFICULTY LOW

400g Greek-style yoghurt

1 teaspoon ground ginger

120g Freedom Foods cranberry, almond and cinnamon cereal

80g toasted pumpkin seeds (pepitas)

1 Line two large baking trays with baking paper.

2 Whisk the yoghurt and ginger in a bowl until well combined. Dollop the mixture onto the prepared trays to form twelve 7cm rounds. Sprinkle the tops with the cereal and pumpkin seeds. Freeze for 2 hours or until firm.

3 Serve straightaw­ay or transfer the discs to an airtight container, layered between pieces of baking paper, and store in the freezer for up to 3 months.
