Pea hummus
MAKES 8 PREP TIME 10 MINUTES
1 cup (120g) frozen peas
400g can chickpeas, drained, rinsed 2 green onions, chopped
½ cup loosely packed fresh mint leaves 2 tablespoons lemon juice
1 tablespoon tahini
1 large clove garlic, crushed
1 teaspoon ground cumin
2 tablespoons boiling water
1 Place peas in a small heatproof bowl. Pour boiling water over peas and stand for 5 minutes; drain.
2 Process peas, chickpeas, green onion, mint, juice, tahini, garlic, cumin and boiling water in the Kuvings Vacuum Blender. Add a little extra boiling water to thin down if necessary. Season to taste with salt flakes and freshly ground pepper. Suitable to freeze. Not suitable to microwave.
