Cheesy Hot Cross Bun Bake
SERVES 6
6 Bakers Delight Traditional Hot Cross Buns, halved
3 bacon rashers, sliced
⁄ brown onion, finely sliced
1 ½ cup tasty cheese, shredded 4 eggs
⁄ cup cream
⁄ cup of milk
⁄ tsp salt
⁄ tsp pepper
4 pieces pancetta
1 cup sour cream
2 spring onions, finely sliced
1 Pre-heat oven to 180°C.
2 On a 20x30cm baking tray, place hot cross bun bases. Layer with bacon, sliced onion and shredded tasty cheese. Top with hot cross bun lids.
3 In a medium bowl, whisk eggs, cream, milk, salt and pepper. Pour mixture into tray, surrounding hot cross buns.
4 Cook in oven for 35-40 minutes, until golden brown.
5 Meanwhile, in a non-stick frypan over medium heat, cook pancetta for 5-6 minutes, until crispy.
6 Top warm bake with sour cream, pancetta and spring onion slices. Serve immediately.
