SERVES 6 PREP + COOK TIME 3½ HOURS
1 tablespoon olive oil
200g smoked pancetta, diced (you can get this from a good butcher or deli)
2 tablespoons unsalted butter 1 brown onion, finely diced 2 small celery sticks, finely chopped
1 medium carrot, finely diced Salt and freshly ground black pepper
500g pork mince
500g veal mince
200g crushed tomatoes
1 cup dry white wine
2 fresh or dried bay leaves
1/8 teaspoon freshly grated nutmeg
1 cup full cream milk
2 cups chicken or veal broth, or water
1 large piece of parmesan rind 500g fresh pappardelle or tagliatelle
