Boutique Hotel Indigo brand raised eyebrows in some quarters when it chose the Adelaide market precinct as its entry point to Australia this year, but there’s method in its “madness”. The Adelaide Central Market is the largest fresh produce market in Australia and one of the biggest undercover market in the Southern Hemisphere, attracting 8.5 million visitors a year.

It was a grand entrance too: Hotel Indigo Adelaide Markets, which opened on March 1, boasts the highest rooftop bar in the city, Merrymaker, on the 16th floor, looking out over the central business district and beyond to the Adelaide Hills. It’s a raw food-focused venue offering a selection of local seafood (organic Coffin Bay oysters, anyone?), cheeses and charcuteri­e.

Foodies will also be tickled pink on the ground-floor all-day dining venue Market & Meander: its colour scheme was inspired by long-serving South Australian premier Don Dunstan’s flamboyant pink shorts!
