Q& A with Grace Mazur

7 Mix extra milk and egg yolk in a small bowl. Brush choux with egg wash and sprinkle with a little bacon dust.

8 Bake choux for 18-20 minutes. Turn off oven and remove tray. Pierce base of each choux with a skewer and return tray to oven for a further 5 minutes, with the door held slightly ajar, to dry out choux. Transfer choux to a wire rack to cool.

FILLING

9 Place parmesan in mixing bowl and grate 10 sec/speed 10. Add cheddar and gruyère, then grate 6 sec/speed 7.

Transfer to a bowl.

10 Place remaining filling ingredient­s in mixing bowl and cook 12 min/100°C/ speed 4.

11 Add grated cheeses and remaining bacon dust, then mix 20 sec/speed 4.

Cool.

12 Place cheese mixture in a clean piping bag fitted with a 5mm plain nozzle. With a sharp knife, make a small hole in the side of each choux and pipe in mixture. Serve gougères at room temperatur­e.

Grace, tell us how you came to bring Thermomix to Australia?

I first saw Thermomix in action in Poland and knew it would change people’s lives for the better, so I approached the manufactur­er. The rest is history!

Yes, I’m so grateful for my husband’s unwavering support over the years, and to Bianca for standing by my side at the early Cooking Experience­s [demonstrat­ions] we hosted in our home. To have her here today as Executive Director, working side by side with me, is a personal and profession­al relationsh­ip I’m grateful for.

What is your favourite meal to make in the Thermomix and why?

There are so many options, but risotto is still one of my favourites, as it practicall­y makes itself, with no stirring at all. The Thermomix does it all for you.

How do you go about learning how to use a Thermomix?

It’s so easy once you get started! Your Consultant is there to guide you and answer questions, including helping you convert your own recipes to Thermomix. Also, with guided cooking on Cookidoo, our recipe platform, we have a recipe for practicall­y everything with step-by-step instructio­ns on screen. It’s foolproof!

What are some amazing things you can do with your Thermomix?

The TM6 model has 13 modes at the touch of a button, including thickening for perfectly emulsified sauces, slow cooking, rice cooker, sous vide, even pre-clean. It blends, beats, chops, crushes, grates, kneads, mills, mixes, stirs, steams and weighs ingredient­s. It even makes a perfect soft-boiled egg! What’s incredible, though, is that unlike any Thermomix before it, the TM6 improves with age, thanks to software updates. We started with 10 and now have 13 pre-set modes. Every TM6 receives them, regardless of when you bought it. I think I can safely say we’re the only kitchen appliance that gets better after purchase.
