APPLE, RED CABBAGE AND WALNUT COLESLAW
SERVES 4 INGREDIENTS
• 1 Granny Smith apple, grated or julienned
• 1 cup red cabbage, thinly sliced
• 1 carrot, grated or julienned
• 4 spring onions, thinly sliced
• ¼ cup toasted walnuts
• ½ bunch dill
• Juice of 1 lemon
• 2 tbsp olive oil
• ½ cup thick Greek yoghurt
METHOD
1 Combine apple, cabbage, carrot, spring onions and walnuts in a large bowl. Set aside.
2 To make dressing, place dill, lemon juice, olive oil and yoghurt in a food processor and blitz until well combined. Alternatively, chop dill then stir in the remaining ingredients. 3 Toss slaw and dressing together then serve.
