Move over avo toast – new research from Australian Mushrooms reveals that 60 per cent of Aussie diners are craving new flavour combinatio­ns at their local cafe.

Australian cafe culture is now emulated throughout the world; The New York Times once reported that its city’s brunch and breakfast establishm­ents, once a mecca of greasy fry-ups and boozy cocktails, could do with some brightenin­g and lightening, Australian-style (some of the city’s hottest cafes are now peddled by Aussie-born operators).

Now, research from Australian Mushrooms is showing 36 per cent of Aussies would choose dining out for breakfast over lunch or dinner, but 43 per cent of those believe the menu at their local cafe could do with a shake-up.

For chef Jason Roberts, mushrooms are the tasty answer to these brunch-time dining woes.

“Mushrooms are the ideal canvas for the ultimate breakfast, lending themselves to any flavour profile with their own unique earthiness,” Roberts says.

New Zealand-born Roberts, a former executive chef at Sydney’s famed French diner Bistro Moncur, but most famous for his role hosting TV series Fresh, has partnered with Australian Mushrooms to spread the good fungi word.

“We’d love to see Aussies getting creative and experiment­ing with the mighty mushie to create new taste sensations,” he says.
