Florals in fashion at high tea

FLORAL fashions in pretty pastels and vibrant jewel-colours created a picturesqu­e scene in the gardens of Gabbinbar Homestead at the recent Hats and High Tea event, held as part of the Toowoomba Carnival of Flowers.

More than 90 guests, wearing their best hats, frocks and suits were delighted with a four-course, hand-crafted tasting menu created by Gabbinbar Homestead’s head chef Bernhard Kohlhuber.

Inspired by the tradition of high tea dining and Darling Downs local produce, the menu featured buttery kipfler with wild gin cured salmon, a petit pastrami brioche, a homestead ‘Top Of The Range’ mushroom pot pie with tarragon chicken, black bunya triple cream brie and a decadent selection of desserts including a hazelnut and coffee macaron, lavender creme brulee tartlet and churros with salted caramel.

“The 70th Toowoomba Carnival of Flowers has provided an opportunit­y for Gabbinbar Homestead to welcome local and visiting guests to the homestead to explore the grounds and estate, and experience our award-winning food and exceptiona­l service” said chef Kohlhuber.

“I’m delighted to create this exceptiona­l menu and celebrate local Darling Downs purveyors such as Bunya Cheese and Metiisto Chocolate.”

The function was hosted by Dine Darling Downs with Triple M’s Lee Faulkner emceeing the event.

Flowers were provided by The Luxe Bloom and guests enjoyed tunes by local musician Andrzej Fenner.

“We are so happy to be partnering with Dine Darling Downs for the Toowoomba Carnival of Flowers to host this event” said Cheryse Bliesner, operations manager of Gabbinbar Homestead.

“We don’t often get the opportunit­y to open our doors to the community and its visitors, unless they attend a wedding here, so it is lovely to do so.”
