Dry-aged steaks on menu at new-look Spotted Cow

HAVING completed her chef apprentice­ship at the Spotted Cow, it was only right Tara Napier returned to the famous venue to make delicious food under the new ownership.

The sous chef is part of the new kitchen team at the Cow, which is relaunchin­g to the public today from 10am following a $1.5 million redevelopm­ent by Hallmark Group.

Now working with exNorman Hotel head chef Linton Smith, Ms Napier said she was thrilled to be part of the team and loved the pub’s new facelift.

Hallmark Group marketing manager Tammy Wood said the food would play a big role as part of the redevelopm­ent, with the company investing in a dry-ageing cabinet for its beef as well as a floating grill.

“We were so fortunate to recruit Linton from the Norman Hotel in Brisbane, which is known for its amazing steaks,” she said.

“The Toowoomba locals are definitely up for a treat.

“There’s the impressive dry-ageing cabinet that is going to immerse those flavours of the steaks.

“This definitely will have delicious pub classics that we all know and love, there are some amazing lunch specials, and there are the beautiful fresh papaya salads.

“Linton is also known for his duck pates and there will be kids meals for them to enjoy.”

Hallmark director Scott Hempel, who grew up on the Darling Downs, said he was excited to see what locals thought of both the food and the atmosphere following the redevelopm­ent.

“The main thing we wanted to do was make sure it had all the modern touches but still maintained the feel of the original,” he said.
