VEGETABLE, HAM & NOODLE CUPS

SERVES 6 PREP 10 MINS. COOK 35 MINS

INGREDIENT­S

• 170g packet chicken-flavoured 2-minute noodles

• 3 cups mixed vegetables, grated

• 2 eggs lightly beaten

• ½ cup light sour cream

• ½ cup ham, chopped

• ½ cup light tasty cheese

METHOD

1 Preheat oven to 180C. Lightly spray a tray of 6 muffin cups with olive oil.

Cook noodles as directed, reserving flavour sachets. Drain, then rinse under cold water. Place in a bowl.

2 Add the reserved flavour sachets, grated vegetables, egg, light sour cream and ham.

Spoon equal portions into muffin pans and top with cheese.

3 Bake for 30-35 minutes or until set. Serve warm with vegetable sticks and tomato salsa.
