Pork patties

HERE’S a dish you are going to want to try straight away.

Cook a roast pork one night and have these pork patties the next day with the leftovers.

These tasty little guys are great served with a tossed salad or creamy coleslaw.

Add a dollop of mayonnaise and a sprinkle of sliced green onions for a delicious garnish.

For a lazy dinner we wrap them in a lettuce leaf and eat them as finger food.

WHAT YOU NEED

■ 1 cup of mashed, cooked, peeled sweet potato

■ 2 cups of chopped pork

■ 1 cup of grated cheese

■ 2 green onions, sliced

■ 1 cup of breadcrumb­s

■ 1 egg

■ 1⁄2 teaspoon of smoked paprika

■ 1⁄4 teaspoon each of salt and pepper

■ 1 tablespoon vegetable oil

METHOD

Combine everything.

Mix well. Use a wooden spoon or your hands if you need to.

Roll into balls and flatten. In a large non-stick pan, heat extra oil over a medium heat.

Cook patties, flattening with spatula and turning once, until browned and heated through. It takes about 6 minutes.
