This Var­sity Lakes in­sti­tu­tion of­fers an all-day menu em­pha­sis­ing clas­sic, fresh food with a twist. Co-owner Marc Kin­vig says a good brunch op­tion is the full Span­glish, Black­board’s Es­panol take on an English breakfast. Chorizo sub­sti­tutes for black pud­ding, there’s so­brasada for sausage, Span­ish-style ja­mon for ba­con and fried duck eggs with crunchy pota­toes on the side. “We look at trends and then try to do them our way,” Marc says. The crab­meat scram­bled eggs is an­other hit with late morn­ing din­ers and there are su­per­food op­tions too, in­clud­ing colour-co­or­di­nated bowls.
