Is there anything more comforting than a plate of freshly made gnocchi on a chilly evening? The new gnocchi at The Collective is made fresh daily with fluffy potato and fine Italian 00 flour and handrolled to ensure it is delectably light. “As with all our dishes, the art is in using the best ingredient­s and making it fresh,” The Collective’s co-owner Jeremy Davidson says. The tricky part comes in choosing a sauce. There is the creamy pumpkin with gorgonzola, parmesan, walnuts and fresh parsley or, perhaps, the mushrooms and truffle. Of course there are also the Italian classics: bolognese, napoli or butter and sage. “Gnocchi is the traditiona­l feel-good food,” Jeremy says. Several million Italian nonas can’t be wrong.
