RAINBOW SURPRISE PARTY CAKE

SERVES 10. PREP 1 HR. COOK 30 MINS

INGREDIENT­S

• 4 cups plain flour, sifted

• 2 cups caster sugar

• 1 tsp salt

• 2 tsp bicarbonat­e of soda

• 2 cups milk

• ½ cup white vinegar

• 4 eggs

• 2 tsp vanilla extract

• 400g butter, melted

• 2 tsp red liquid food colouring

• 2 tsp blue liquid food colouring

• 2 tsp yellow liquid food colouring

• 2 tsp green liquid food colouring

• 1 tub pre-made vanilla icing

• 4 tbsp hundreds and thousands

• ½ cup Smarties

• ½ cup chocolate Freckles

METHOD

1 Preheat oven to 180C. Grease and line 4 x 20cm cake tins.

2 Put the flour, sugar, bicarb soda and salt in a bowl, whisk to combine. 3 Combine the milk and vinegar in a jug and wait for the milk to curdle or bubble. Add the curdled milk to the dry ingredient­s with the eggs, vanilla and melted butter. Whisk (or beat on slow) until the batter is smooth.

4 Divide the batter evenly between four bowls. Add a few drops of food colouring to each bowl to create your rainbow.

5 Transfer each coloured batter portion to one of your cake tins. Bake for 30 minutes or until a skewer comes out clean.

6 Use a scone cutter to cut a circle out of the centre of three of the cakes. (One cake will have to be the lid, so don’t cut a circle out of it) 7 To assemble the cake, start with one section with the cut out, spread the top with icing then add the next section with cut out and spread that with icing. Add the third section with cut out and spread it with icing. Now, stop, don’t add the lid yet because you need to fill the centre of the cake first. 8 Fill the centre of the cake with Smarties and Freckles. Place the final layer on, the layer without the cut-out section, and then ice the outside of the cake.

9 To put the sprinkles on top of the cake, use one of the cake tin sides

(with the bottom removed) as a collar. Place it on top of the cake and then add the sprinkles to the top of the cake. Press them down gently with a spoon to get them to stick.
