Slow-cooker sticky date pud­ding

1 1⁄4 cups self-rais­ing flour

1 1⁄2 cups brown sugar

2⁄3 cup milk

1 egg

50g but­ter, melted, plus

25g ex­tra chopped

1 tsp vanilla bean paste

200g fresh dates, pit­ted, finely chopped

2 cups boil­ing wa­ter Dou­ble cream, to serve

1. Spray in­side of slow-cooker bowl.

2. Com­bine flour and 1⁄2 cup sugar in a large bowl. Whisk milk, egg, but­ter and vanilla in a jug un­til com­bined. Pour over flour mix­ture and stir un­til smooth. Stir through dates. Pour into pre­pared slow-cooker bowl.

3. Sprin­kle with re­main­ing sugar. Dot with ex­tra but­ter. Gen­tly pour over boil­ing wa­ter. Cook, cov­ered, on high for one hour, 40 min­utes or un­til a crust forms and top springs back when pressed with fin­ger.

4. Turn off slow-cooker. Stand pud­ding, un­cov­ered, in bowl for 10 min­utes. Serve with cream.
