One of tonight’s golden nuggets comes from China Doll, Wool­loomooloo chef Frank Shek, who shows vet­eran host Maeve O’Meara (above with Shek) how you can do away with those fancy (read: ex­pen­sive) sous vide ma­chines and cre­ate the same ef­fect us­ing a bowl of cold wa­ter and an or­di­nary zi­plock bag.
