WITH no stoves, no ovens, just the power of fire, a rural Queensland restaurant has become a surprise entry in next weekend’s delicious. 100 in U on Sunday.
Homage, at Spicers Hidden Vale in Grandchester, an hour’s drive west of Brisbane, prepares meals using only an outdoor open fire and brick-faced wood oven. “It’s actually really cool,” head chef Ash Martin said.
“The first few months were really challenging, and all the chefs had to basically throw out what they knew about normal cooking and start from scratch, but now I think they’d struggle in a regular kitchen. It’s challenging, but it’s fun.”
Even more exciting is that much of the produce in the dishes is either grown on site, such as corn, chillies, tomatoes and cucumbers, or bought from local farmers.
