The culi­nary world is very con­ser­va­tive. Has your unique style ever caused a (sorry for this) stir in the kitchen? I’ve al­ways been more of an “ask ffor for­give­ness, not per­mis­sion” kind of girl. But I ac­tu­ally think it’s helped me.

Your deca­dent sug­ary con­fec­tions are leg­endary. Where does the in­spi­ra­tion come from? Grow­ing up, all my money went to lol­lies; my cre­ations stem from child­hood mem­o­ries of Red­skins, Milk Bot­tles and Snakes from the milk bar. Mum used to get mad, but it was all in the name of re­search. You’ve met a heap of celebs in your ca­reer. Now be hon­est and tell us who made you more ex­cited: Gor­don Ram­say or Cookie Mon­ster. I lost my sh*t meet­ing Gor­don.

I al­ways looked up to him. He’s seen as a brash rule breaker, but he’s a big softie, too.
