Chef Hugh Fearn­ley-Whit­tingstall em­barked on an ex­per­i­ment in sus­tain­abil­ity 15 years ago. He moved to River Cot­tage in Dorset and set about grow­ing his own pro­duce and rais­ing live­stock. His life in Dorset has in­spired many and now the trend­set­ter is in Aus­tralia spread­ing the word. He meets Paul West, a Tas­ma­nian chef who will head up a River Cot­tage ex­per­i­ment in Cen­tral Tilba, on the NSW coast.
