Chef Hugh Fearnley-Whittingstall embarked on an experiment in sustainability 15 years ago. He moved to River Cottage in Dorset and set about growing his own produce and raising livestock. His life in Dorset has inspired many and now the trendsetter is in Australia spreading the word. He meets Paul West, a Tasmanian chef who will head up a River Cottage experiment in Central Tilba, on the NSW coast.
