Say cheese for Delicious awards
RAW milk is illegal and dangerous but cheese made from raw milk is both safe and delicious.
Cheese made from raw milk has only been legal since 2015 and since then a handful of raw milk cheeses have come onto the market. Now Pecora Dairy has been announced as a state finalist in the prestigious Delicious Produce Awards this week.
Unpasteurised milk is unsafe for human consumption but Food Safety group director and Food Authority CEO Dr Lisa Szabo said processing raw milk cheese ensures any harmful microorganisms will be negated.
Cressida McNamara of Pecora Dairy gained approval from NSW Food Authority to produce raw milk cheese. “Cheese is a way of preserving milk. When making cheese from raw milk it’s a process of killing the bugs and allowing good bugs to proliferate. Cheese making is a balance of art and science, it’s important to have a full understanding of that so people can consume them safely,” Ms McNamara said. The cheeses will be available in June.
