Say cheese for De­li­cious awards

RAW milk is il­le­gal and dan­ger­ous but cheese made from raw milk is both safe and de­li­cious.

Cheese made from raw milk has only been le­gal since 2015 and since then a hand­ful of raw milk cheeses have come onto the mar­ket. Now Pec­ora Dairy has been an­nounced as a state fi­nal­ist in the pres­ti­gious De­li­cious Pro­duce Awards this week.

Un­pas­teurised milk is un­safe for hu­man con­sump­tion but Food Safety group di­rec­tor and Food Au­thor­ity CEO Dr Lisa Sz­abo said pro­cess­ing raw milk cheese en­sures any harm­ful micro­organ­isms will be negated.

Cres­sida McNa­mara of Pec­ora Dairy gained ap­proval from NSW Food Au­thor­ity to pro­duce raw milk cheese. “Cheese is a way of pre­serv­ing milk. When mak­ing cheese from raw milk it’s a process of killing the bugs and al­low­ing good bugs to pro­lif­er­ate. Cheese mak­ing is a bal­ance of art and sci­ence, it’s im­por­tant to have a full un­der­stand­ing of that so peo­ple can con­sume them safely,” Ms McNa­mara said. The cheeses will be avail­able in June.
